Carrick The Billet-Doux Pinot Noir, crafted by winemaker Steve Green at Carrick’s organic estate in Bannockburn, Central Otago, New Zealand. Fermented wild from hand-harvested Pinot Noir clones 5, 6, 13, it matures 22 days on skins followed by 9 months in neutral oak; no fining, filtration or sulfites-pure and unadulterated expression. In the glass, it’s fragrant with poached plums, blackcurrant, mushroom and brown spice.
