The Aligoté is harvested from 65-year-old vines, also grown on Portlandian limestone soils, around the village of Saint-Bris-le-Vineux. The plantings are at 7,800 vines per hectare. The fruit was direct-pressed and cold-settled before a natural yeast fermentation with temperature control in tank.
