Color was encouraged to drop out by way of barrel fermentation and lees stirring.The result is something unexpected yet familiar. Textured, full & flavourful. On the nose is a delectable mix of caramel, white flowers, lemon rind and exotic fruits. the palate has a strong acidic drive which helps to support the full fruit weighted palate with just a tickle of phenolics for interest.
