The Paper Mâché Shiraz, made by Ashley Ratcliff in South Australia's Riverland, is a stripped-back, minimal-intervention take on Australia’s most iconic variety. Wild-fermented, unfined and unfiltered, it opens with lifted aromas of mulberry, black pepper, and violets. The palate is medium-bodied and savoury, showing blackberry, dark cherry, and earthy spice, supported by gentle tannins and fresh acidity.
