Save Our Souls Bubbles & Co Rosé #4 NV, crafted by Jason Searle & Bill Downie in Victoria (Yarra Valley / Strathbogie Ranges / Heathcote), is a multi-vintage sparkling blend: 66% Chardonnay (Strathbogie), 29% Pinot Noir (Yarra Valley) and 5% Vermentino (Heathcote). Pale salmon in hue, the nose offers subtle red berries over a yeasty-toasty base. On the palate it displays fresh stone fruit, fine tracer bubbles and balanced acidity, with a chalky, relatively dry texture and a savoury finish underpinned by chewy tannins.
