Save Our Souls Rosé 2023/24, by Jason Searle & Bill Downie in Heathcote-&-Multi-regional Victoria (mainly Grenache-Mourvèdre, with a dash of Vermentino), is a textural dry-rosé built for more than just summer. Bright salmon in colour, it offers juicy strawberry and raspberry fruit, with a perfumed lift of lavender and thyme, finishing with crisp acidity and a balancing acid line that gives the wine refreshing tension. Aged on lees to add weight, it shows elegant structure and clean minerality.
